Broccoli Frittata

Ingredients:

10 eggs, beaten
1/2 diced red onion
1 1/2 cups finely chopped broccoli
1 cup diced mushrooms
1 teaspoon garlic powder, or fresh minced garlic
Sea salt and pepper to
2 tbsps coconut oil

Directions:

Warm the coconut oil in a pan. Saute the onions until they caramelize. Add the diced mushrooms and chopped broccoli and saute until the broccoli is soft (usually about 5 minutes). Spread the vegetable mix across the bottom of the pan. Add the eggs, sea salt, pepper and garlic by gently pouring over the top of the vegetables until eggs are cooked.

I also like to add some shredded raw milk cheddar cheese to this.

Tip – make this in a skillet that can go under the broiler, and then put it there so the top of the eggs get cooked.
